It doesn't. This was an anticipated feature that was demonstrated by
Microsoft at the Project Conference two years, but it was never implemented
in the final release of Project Server 2007. Hope this helps.

Dale,
Thanks a lot for confirming this - quite disappointing ;-( - piece of
information!

Unfortunately this (non) feature still appears in PWA 2007 Help. If you're in PWA "Manage Categories" and select help, you get "Create or modify a category" and item #9 is "Server field access control". Initially this had me stumped cuz I thought I must have mis-configured a server setting somewhere - this "documented" feature didn't appear! I only found out that field-level security had been dropped when I located these posts on the web.

Don --

You are correct that there is no field-level security in Project Server
2007. What you see in the Help article, I suspect, is a "remnant" of
Microsoft's original intention to provide field-level security. When Gary
and I were writing our Project Server 2007 book for administrators, I was
puzzled that I could not find field-level security in the tool, since I had
seen a demonstration of this feature at the Project Conference the previous
year. In fact, I went back and reviewed a video from the Project Conference
documenting that Microsoft was going to provide this functionality.
Ultimately, this functionality was dropped from the tool, and thus, it is
simply not available.

My advice for you, my friend, is this: don't believe everything you read in
the Help files or other documentation from Microsoft! :) Instead, trust
what you read in this newsgroup. None of us have an axe to grind, so to
speak, and will always give you the truth, even if unpleasant. Hope this
helps.
