What options are available in MS Project 2003 for
exporting to Microsoft Excel?

You can select/copy/paste via the Windows clipboard, and you can use
"mapping" to import/export Excel files.

You can cut and paste from the project table into an excel spreadsheet.
You can do a save as and save to excel using whatever predesigned or custom
designed map you want to use.
You can use the analyze timescaled data add-in to export timescaled data.
You can use VBA to write a custom data export (you can see a couple examples
of this at http://masamiki.com/project/macros.htm)

These are the basics, but I think it would be possible to imagine a few
other ways.

It is generally possible to get everything from project into excel.

In addition to those ideas mentioned in the other posts, it may not be obvious that you can use Paste Link to also create a live link between Project and Excel. I'm doing this now, and it's great! Every week, I update my status in Project, then I open up Excel where I have linked to my task data. In Excel, I create graphs, which then I have linked into Word for my weekly status report. Really cool!

Kevin,
Just a caution. Paste links will work but they have to be used with care
because they are prone to corruption. It's been a long time since I used
them but as I recall, if the Project file or Excel file is moved to a
different location the past links may not follow. Also, whether is is
apparent or not, a paste link has a component in both the source
document and destination document. When links are broken, the source
document should be saved first and then the destination document. If
both documents aren't saved there will be fractured link segments
remaining.
