Within Project Server - I would like to have one screen that shows the
project name along with a project status - or a gantt chart - something to
show the date range of the project to make it a little easier to manage
resources and so that management can have one easy place to see this
information!

Doesn't the Project Center page show this kind of information? You would
need to supplement the columns displayed there with a custom enterprise
field of some type that displays project status using graphical indicators,
however. Hope this helps.
