Properties added to attachments

I have noticed that when I recieve an email with attached Office documents,
custom file properties are added right into to the the attachments that
include the _EmailSubject, _AuthorEmail, and _AuthorEmailDisplayName, plus a
few others. Are these being added by Outlook or Exchange and why is it being
done?
