Can you set several projects to all point to the same Sharepoint Site? If
so, how do you do this, and is using subsites the only method?

Would like to have only one site for mutiple projects.

One option you could try is to use the option of subsite of another project
workspace. What exactly are you trying to acheive wit one workspace?

This is the answer I expected, but if you wanted all issues, risks, etc
posted in one sharepoint site, yet have mutiple project plans (similar to a
program with mutiple projects) but want to track all collateral and issues,
etc. on one SP site.

I understand most people want everything tracking to separate sites. The
only other way is by getting out of the project and then going to another.

Hi Plaverty,
Unfortunately only one project can be associated with one Project Workspace.
Hence what you want to do cannot be done out of the box.
