If there is a way to automate pst file backup and log the successfull
completion of the backup (maybe by sending an E-mail to administrator)

Microsoft add on just remind about the backup and you have to manually click
the button to start the backup.

Some people recommend to use xcopy. I have a feeling that at some point I
will get access violation (even though when Outlook is closed)

You should be able to set the interval, using the addin, and automate the
process.
