PST files

Can someone explain (or provide a tutorial) about what pst files are. I have
users constantly restoring them from an old pc and am perplexed.

Is this only contacts>

Unless you're running against Exchange Server, all Outlook Data is stored in
the same file. That file is your Personal Folders file (*.pst) It's where
all the mail, calendar, contacts etc are stored.
