PSTs for HTTP email & Unicode issues

On XP Pro I've set up Outlook 2003 to show me 4 HTTP email accounts.
Unfortunately, by default the PSTs created are not Unicode form. I understand
that conversions are not possible, once created. So I started over, creating
the PSTs first, spec'ing Unicode, before creating the email account records,
but can't find a way to associate each email account with the Unicode file I
created for it. Plus I have double the PSTs I want! Suggestions please on
(a) specifically how to delete excess PSTs showing in the folders hierarchy
in Outlook without fouling/corrupting Outlook, and (b) how I can start over &
get Unicode PST's for my 4 email accounts.

Many thanks for your suggestions. (PS...Please explain when Outlook must be
closed in the process, as I think I have NOT paid enough attention to this.)
