They're probably being AutoArchived. Right-click his Calendar folder, click
Properties, then the AutoArchive tab. Is it enabled? If so, you could
disable it, but it's probably a better idea to leave it enabled to keep his
default file or mailbox to a reasonable size.
The AutoArchive window should show you what file Outlook is saving the
archived items to (of course, if it's set to permanently delete items,
they're gone -- you'd want to change that!). The following article tells
you how the archived items can be easily accessed, and put away again, when
needed:
