In Customise Quick Access Tool Bar option, "Modify" (next to "Reset") option
is greyed out and is not accessible. How do I activate it?

Yes.

I could find the information in some other place that if it is not a macro
them 'modify' will not be active. I created couple of macros (autofit to
column and row) and then assigned the macros.

I feel MS should provide option to modify the icon for non-macro commands
also (as was in earlier versions) or is there any workaround for this?

Correct, you can only use the Modify command for buttons on the Quick Access
Toolbar for macros. There isn't a workaround and many feel the same as you,
that one should be able to modify any button image and hopefully we've been
heard on this issue in the next version. The only thing you can really do is
modify the Ribbon but that could involve a learning curve if you don't know
xml.
