Quicker way to select Fonts

When compiling an email I sometimes cut and paste quotes from received
emails and addresses from the Address Book. When I do they are
invariably in a different font to the rest of the message. I like
Verdana as my font. If I select the text in the other fonts and then
select the down arrow on the font selection box it takes a while for
the full list of fonts to appear and then longer to manually scroll
down to the V's. Is there a quick way to get to the V's? I have tried
pressing V on the keyboard but that has no effect. If I go to the main
menu - Format - Font and then press V it does jump down the list. Why
is it not possible to do it in the drop down list?

I use Entourage 2008, and I can actually press a key and have the cursor
jump straight to that position in the font list. I'm not sure if there is a
bug, or an odd behaviour, in Entourage 2004, but your post seems to confirm
this. Nonetheless, there is an easier solution: after copying the text,
click on Edit>Paste Special>Paste as Plain Text. This should strip off all
custom formatting that has been applied to the text in the clipboard and
result in the text being displayed in the font that is currently selected
(i.e. Verdana). There's also a keyboard shortcut for this: Cmd+Opt+v.

In Entourage 2008, the most used show up at the top of the list. I'm not
exactly the term "most used" is correct, but right now I have 4 listed so
it's more than the default font selected.

Did you try choosing the font from the Format menu (and moving the cursor
over one of the font names) before pressing the first letter?

As you have discovered, pressing a letter when using the Font drop-down list
above the message body will not work. Neither will trying to type the first
letter before hovering the cursor over a font name.
