If you're a teacher, plesase see the recent post from a student who cracked
the password to his teacher's Excel-based homework assignments, and then
figured out how to unhide all the answers to the quiz. the homework
involved some math problems. So the answer is: kids too stupid to do the
math are still smart enough to hack passwords and get the answers.

So if you find an easy way to create quizes in Excel, beware the
vulnerabilities.

To answer your question: you can put Validation on your answer cells. For
example, cell A1 states the question (what color is your cat?), cell A2
allows the user to select an answer. Therefore, go to some obscure area of
the spreadsheet and list your mulitple choices. As an example, we'll go to
B1 and put black, B2: white, B3: calico, B4: other. Now, highlight cell A2
and choose Validation from the Data menu. Choose the List type, and specify
B1:B4 as the range. Now, in order to fill in cell A2, the user must type
one of the four options exactly, or choose one of them from a drop down list
that now appears inside the cell.

There's no real need to hide column B and protect the worksheet, but you can
if you want. You'll definitely want to hide any "grading" functionality
that determines whether the correct answer was selected for a question or
not.
