quotes the wrong way round

When I am typing dialogue in Word with smart quotes and a speech ends with a
dash because another speaker interrupts, the quote marks after the speech are
quote when they should be unquote. I can only work around this by typing the
quote after the speech and then going back and inserting the dash. Is there
any way I can make Word use unquote as the default at all times after quote?

You can force a specific symbol with the following shortcuts:

Ctrl+', ' = apostrophe or single closing quote
Ctrl+`, ` = opening single quote
Ctrl+', " = closing single quote
Ctrl+`, " = opening single quote

In case it's not clear, the setup key for the opening quotes uses the acute
accent (below the tilde on the top left key on most keyboards), and the
closing quotes use the apostrophe key.
