My OLAP cube is corrupt and won't build, this happend after a server disk
space issue. What steps do I take to remove the corrupt cube and build a new
one? Also, will this revove and rebuild of the cube result in loss of data
to Project users?

Reuter:

You can manage cube deletion through SQL Enterprise Manager if you're using
SQL 2000 or SQL Management Studio if you're using SQL 2005. You can simply
build a new cube and then edit your Analysis views to point to the new cube.
You should not experience any data loss unless the underlying Project Server
database was also damaged.
