Recovering Deleted Emails

I have a unique situation (for us), in that we need to attempt to recover
text from some previously deleted emails.

In this case, the PST file is intact, and everything is functioning normally.

Does anyone have any suggestions on the best way to go about recovering
these deleted emails?
