way to reset or recover the PW?

It depends on how they were protected. Is a password required to open the
file? If so then you might have some success with password cracking
utilities that are available. (But keep in mind you are providing personal
information, such as a credit card, to a known crack!)

If the documents were protected using Tools/Protect Document then create a
new document and insert the contents of the protected document into the new
one.

The easy way is to ask the ex-employee for the password.

Daaaaaaa - wonders of the obvious, we did over 2 weeks ago. Fortunately
she did finally get it to us.
Thanks to the other 2 suggestions though- they were very useful tips!
