Basic question - why can't I add recurring meetings to an existing meeting
workspace?

An even more basic question we need the answer to before that one can be
answered:

What version of what program are you using?

If my hunch is right you're using Outlook on a Windows PC, in which case
you've wandered into the wrong group... this is for the Mac version of
Office. You'll find the Windows Office groups here;
