remove names from email addresses

Can you tell me how to remove names from list of email addresses that come up
whenever you put in the first initial to send outgoing mail?

I'd like to know also! I know you can delete them if there is more than one
that come up with the letter by right clicking on it and hitting delete, but
what about if there is only one name and you'd like to correct or delete it
(like old addresses?)?
