Removing Word Templates

Is there a way to totally control the template groupings and listed
templates when you create a new document?

I want to remove template groups such as "Legal Pleadings", Mail Merge",
etc. and just have the folders that I create in the Workgroup Templates
location.

Re-run setup and uninstall the templates you don't want.

Additionally, if you want to retain any of the Microsoft-provided templates,
copy them to your own template folders before uninstalling.

Depends on version of Word. In Word 97, you delete the templates and their
containing folders (or move them from the User Templates folder). In later
versions you have to uninstall the templates. For more on the different
kinds of templates, tabs on the file new dialog, and locations of templates
