I know how to resend a mail message, but how do I resend a meeting request or
appointment?

you can't "resend" it, but you can either forward or insert it into a new
message.

You do not need to send in another message. You can forward it. I was
looking for the same answer you were and couldn't find it here, so found it
myself.

If you open up your existing meeting, click on "Actions", the last item on
the "Actions" menu is "Forward". Outlook then forwards the appointment to
whomever, and that person can accept and their Outlook places it on their
calendar.
