Restore of Project File (2007 with SP1)

I accendently deleted a project from the server and SharePoint Work Space.
File are backed up nightly.

From Server Settings I select Administrative Restore. I see the file I
deleted and highlight it. I then navigated to the bottom of the page anbd
select "Restore". I receive message "The selective item will be Queued for
Restore"... days have passed... but still do not see the restored file.

I'm assuming I'm missing a step somewhere here

The restore under Server Settings>Administrative Restore is not the same as
the restores that your DBAs perform on the SQL Servers. The restores you
are seeing are stored in the archive database and I don't believe they store
any SharePoint workspace data.

As for it not restoring the project, did you look at the queue when you
attempted to restore the project? Maybe it can't restore a project if the
project UID no longer exists in the database. Meaning, it can only restore
an older version of the project onto the existing one but cannot restore the
project if the project is missing.
