Return address profile

I have just switched from Eudora to Outlook and am
frustrated because in all of my searches and review of
manual, I cannot find anything about how to set the
appearance of my return address. I could do this in
Eudora. What I am talking about is having control over
how my return address appears to recipients of my e-
mails. I use a forwarding service as my e-mail address
(pobox.com) and do NOT want people to address me at my
server address becuase that may change from time to time.
I also do not want them to see the server address in
addition to my signature forwarding address because they
often take it upon themselves to address me at BOTH
addresses, thereby sending me duplicate e-mails.

Does anyone know if it's possible to make this setting in
Outlook?
