Reversing status after change in % complete

When updating status from my PM, the status date is in the future. Yesterday
I was told to take 100% complete for tasks. Today, 99%. How do I back-out the
100% or is it better to start over.

If I understand your question correctly you finished a task early and set it
to 100% complete; however, now you are being asked to set it back to 99% so
that it will finish as planned? You can change the 100% to 99% and the task
will recalculate to show the appropriate remaining work.
