the option "Address new Meeting" is missing.

I added a lot of new custom fields but didn't do anything to the default
email field.

can I get a custom contact form to operate as I am accustomed, where a RIGHT
mouse drag of a custom contact to a calendar will allow an "address new
Meeting" option?

using OL 2002 and OL 2003 - both.

No, it won't create a new message if you drag to the Inbox either.
