Risk Categories by default

Hello,
Where and how can we change the 3 default Categories of Risk proposed (in a
pick list) by WSS in the project Workspaces?

Hello,
I succeeded in changing the 3 default Categories of Risk proposed for *one*
project Workspace.
How can I standardize these new Categories of Risk for *all* the project
workspaces?
