Yes, you can. I do. On this machine.
I am puzzled as to where you would expect to find the Office icons?
Unless you put them somewhere else, they will be in Windows>Start>All
Programs>Microsoft Office...
You can choose to pin them to the Windows start menu (see the Windows Help
for how) to make them easy to get at.
You can add them to the Quick Launch area in the Windows Task Bar (Look up
Quick Launch in the Windows Help, you need to unlock the Task bar and Enable
the Quick Launch area first)
Or you can add them to your Mac OS desktop or to the Mac OS Dock, as
explained in the Parallels Help:
Creating Aliases for Favourite Applications
You can add a Windows application to Favourite applications:
1. Launch any Windows application in the virtual machine. Its icon appears
in the Dock.
2. Right-click the application icon in the Dock.
3. Choose Add to Favorites from the shortcut menu. An alias for the
application appears on the Mac OS X desktop. Favourite application appears
also on the Applications menu of Parallels Desktop in the Favorites section.
4. Right-click the application icon in the Dock and choose Keep in Dock to
create an alias for application in the Dock.
5. Create the icons in the Dock or aliases on Mac's desktop to all your
favorite Windows applications. Clicking such an alias starts the virtual
machine and then, the Windows application in it. The virtual machine starts
in Coherence mode right away.

I am using a Duo Core Mac that has Parallels installed (Mac OS X and
Win XP Professional). When I operate in virtual machine...the XP, I
can not find Office Icons anywhere even though I have Office installed
on both sides.
My question is ...can I open Office applications in MV mode?
