Same Issue

The same thing is happening to me. Interestingly, I upgraded to Snow
Leopard a week or so ago and was still able to search email through
the top right search box in Entourage as well as through Spotlight.

Then, randomly, I am not able to see any search results containing
Entourage email today. I tried to rebuild, but I'm not sure if it
worked. The rebuild button just became greyed out, with no indication
of status whatsoever. I clicked OK and re-opened the same dialog box
and the button was in its normal state. I have no idea if my index was
rebuilt, but my problem has not been solved.

After searching across multiple forums, it looks like several people
are facing this issue and it looks like there is no silver bullet
answer to the problem.

Break this down into its three components:

1. The Entourage cache files must be getting created in:

/Users/<your home folder>
/Library/Caches/Metadata/Microsoft/Entourage/2008
/<your identity>/Messages/0T/0B/0M

Look in the very last folder for new cache files to appear as you
receive new messages. Observe the date and time.

If new cache files aren't appearing then return to Entourage -->
Preferences... --> General Preferences --> Spotlight and click the
Rebuild button again.

2. If this doesn't work then open the Activity Monitor found in
/Applications/Utilities. is the Microsoft Database Daemon running? This
is what creates the cache files.

If you don't see it running then quit Entourage and restart your
computer. Technically, just launching Entourage should be enough to
start the daemon but a restart may fix whatever caused it to quit in the
first place.

3. If Entourage is creating cache files then the problem is with
Spotlight. This page on Apple's website provides a simple method for
re-indexing your drive: <http://support.apple.com/kb/HT2409>.
