Saving old contacts

Each time I go to send an email to pretty much anyone, as
I start to type the name or address Outlook picks up
those similar names in my Contact list or that I (or this
machine) have previously sent - when the popup display
comes up I have tried using the delete button and that
works for that email only - if I go to send another one
to the same person the old contacts are still there.

This has been a little frustrating as we have just had a
new staff member join us from another organisation who we
affiliate with and when sending some documents to him
Outlook sent it to the old organisation (even though I
only have his new email in my contacts list). This has
also happened with a few staff members leaving (prior to
my employment) and thier old 'Microsoft Mail' addressed
still popup as options to send to even though Micrsoft
Mail has been deleted and those staff members no longer
in our contacts.

How can I get rid of old contacts once and for all?

Remove individual addresses from the autocompletion cache by highlighting
the entry when presented in the suggested names list (use your arrow key to
migrate to the entry) and then hitting your Delete key before you tab out of
the field. To clear the entire cache, follow the instructions here:
