Hi Rick,
The software that you have may include TextBridge which is
also now owned along with PaperPort by ScanSoft. I've received
both of them with on of my scanners. The additional
software may or may not install automatically so you should look
at the CD that came with the scanner. TextBridge will scan as a
speadsheet, the best results I had were the 2nd time I used it,
fiddling with contrast and brightness can also affect the quality
of the scan.
I think my version of PaperPort specifies a that the scan must be 200 to
400 dpi if you want to use a scanned file. It is very important to put
the sheet is perfectly straight relative to the printing on the page.

Both programs can do it. Of course with all OCR software you are bound to
get mistakes (sometimes very funny ones)
