I've been a bit lost using the search capabilities in Entourage 2008.

I recall how to "search within' in Ent 2004 but cannot figure out how to do
the same in 2008. I have 20K emails archived so I'm left wanting right now.

I've tried the Ent Help but could find nothing to this effect.

Thanks in advance for any guidance.

First, make sure you've enabled Spotlight searching in Entourage -->
Preferences... Allow it some time to build the caches for searching.

In Mail view you may or may not have the Quick Filter bar showing just
above your message list. If not then you can select View --> Show Quick
Filter.

The Quick Filter will allow you to search for items within your current
folder list and will only search Subject, From, To, Categories and Projects.

If you want to search *within* your messages then use the Search field
in the Toolbar at the top. By default it begins showing only matches
within your current folder but you have the option to also select your
current IMAP or Exchange account or "On My Computer", All
Messages/Contacts/Events/Notes/Tasks or Everything at once.
