Sending mail from different e-mail accounts

I have about 5 separate e-mail accounts setup and I have 2 main ones that I
want to send mail from, but when I open a mail message, it always has the
sender as the account that is marked as "default". How can I change which
e-mail account the message is sent from?

Example - I manage the E-Prayer Chain at my church, and I want those e-mails
to be sent from an account other than my personal e-mail account. How can I
get the sender of those messages to be from
"(e-mail address removed)" rather than my personal e-mail address?

Any help or advice is appreciated!
