SENDING MAIL IN GREEK AND RECEIVING QUESTION MARKS

I am trying to send through Entourage e-mail in greek to myself and others and they receive an e-mail with question marks. What can i do?

Greek requires a special encoding. Does the copy you receive look OK??
If it does, it probably means that the application they are using to
read e-mails doesn't properly support these encoding (and it might be
time for them to either upgrade or switch e-mail client),
