sent mail not saving

I just set up an Office2007 Exchange email box. Under Options, I have checked
the box "Save copies of messaged in Sent Items folder" but items being sent
are not staying in the sent items folder for more than 1 min. Where are they
going and how can I get them to stay in the folder? I have unchecked the box
that says "In folders other than the Inbox, save replies with original
message" under Advanced E-mail Options. HELP!
