Server 2007 Usage Statistics

I want to collect timephased capacity/volume statistics.

For example how many users logged in to update/publish plans, how many
submitted timesheets, updated documents in WSS, time spent on PWA etc. This
information is useful for capacity/demand planning.

Any pointers appreciated.
