Set specific dates for recurrence in calendar

Outlook Challenged?

I am mystified as to how to set a series of dates on which I will do a
meeting. In Lotus land, you could pick your recurrence, but Outlook seems to
want to force me to make it on a recurring day on recurring on a specific
interval.

I want to vary the interval and would prefer a "pick list" or ability to
type in recurring days in the future for these appointments. Can this be
done in the Microsoft product? I have to be missing something obvious, right?

You can set a recurrence pattern that's close to what the meetings will actually use, then drag individual occurrences to new dates to set the exceptions.
