setting task starting time by hour?

I have a weekend project that starts on Friday night and
finishes Monday morning.
How do I tell Project 2000 to start a task at a specific
time (say 8 pm) on a specific date (say august 6), but not
at 8 am (which is the native start time)? The start/finish
format doesn't seem to have an obvious way to designate
specific times to start or finish.

Hi Andy,

Maybe it doesn't seem to have but it has.
You can enter any time as 8/8/4 08:09 Project will accept it.
To visualize it Go to Tools, Options, View, for date Format select one that
has time of day.

Andy,

Go to Tools, then Change Working Time. Select any day that is NOT a working
day for your project (Mon-Thur) and click Nonworking Time. On the working
days select the time frame you want in From and TO areas.
