Setting the spell checking dictionary in Outlook 2003

In the Outlook Options spelling menu I set the dictionary to English U.K.,
however when I spell check an E-mail that I am writing it will often switch
to English U.S., and eventhough I change it to English U.K. at each word
check it will keep switching back to English U.S. How can I make it stay on
Englis U.K.?
