Setting up User defined fields

Want to create or rename existing field so I can make a
list of services provided for customers. ie. Lawns-
true. Want to be able to search for just a true criteria
in this field.

You can't rename fields. You can add new ones either in the Field Chooser or Fields dialog for the current folder view or in a custom form. See http://www.slipstick.com/dev/forms.htm if you want to go the latter route.
