Setup an email for a future time and attach future documents?

I have a situation where i need to send an email to a colleague in another
country and send them files that are currently not created. My computer will
generate the images through the night and automatically save them to our
server. But i will not be in the office to send them. Is there a way of
setting up an email to send at a set time when i know all the images will
have been created and automatically attach and send them???? I use
Outlook2003 and the files will be Jpegs in a dedicateed folder.
