Several Infopath questions

Infopath is OK, the problem is that it doesn't allow for a lot of flexibility
in form design. If I wish to change the size of a cell/table, simply entering
the number of inches it should be doesn't always work.
But right now I have two pressing issues.
1) Two of the text fields in my form have a light grey background. But when
I print (and print preview) the form; the background is clear (white). Why
isn't the background printing properly.
2) When I create an Infopath form, am I supposed to be able to read it in
another Office application?

For layout issues, try using a layout table as a sort of grid to help line
things up.
It won't show but it makes it a lot easier to right align / left boxes and
titles.

1st question: Check your Internet printing options.
In Internet Explorer, open Tools / Internet Options / Advanced
Go down about 2/3 of the list until you find Printing.
Check the box for Print Background colors.

2nd question: InfoPath forms are directly 'readable' by other Office
applications.
You do have Export options that might work for you though.

The problem I had with layout was that when I broke down a 7.5" section to
two columns and wanted to change the two halves to say 4 and 3.5 from the
default of two 3.75 columns, the form suddenly got longer. Maybe there's a
way to do it but it doesn't seem terribly intuitive right now.

So I shouldn't try printing it unless I bring up the .xml version of my form
in IE?

My only export options are Excel and Web.

Are there any books on InfoPath?
