Showing "BCC" and not showing "From" when writing new mail

Outlook 2007 on this computer, when you hit "New" opens a new mail
message that shows the "From" area and does not show the "BCC" area.
I'd like to know how to: (1) stop showing the "From" area and (2)
showing the BCC area on messages that I'm writing. Any help would be
appreciated. Thank you! Ivan
