Simple text fields in 2007

I use many Word 2003 documents that have multiple text fields. You know, the
grey ones you can tab to and from quite easily to enter information that is
unique to the project you are working on.

Well, how do I unlock the document for editing without losing those fields
in 2007 In 2003, I would use the button that looked like a padlock on the
Forms toolbar. No such luck in 2007.

The button isn't on the ribbon but can be added to your Quick Access
Toolbar. Right-click the toolbar and choose Customize. In the dialog, set
the category to All Commands, scroll down and click on the Lock command, and
click the Add button in the middle of the dialog. Click OK, and you'll have
the same icon that was on the Forms toolbar.
