Single cell opens as 2C X 2R size? How do I change?

When I 'click' on a cell, it 'opens' with a 2 colmn X 2 row size. How do I
get back to just having a 'normal' 1C X 1R size?

the method varies depending on the version you're using, but in general:

Select the merged cells, choose Format/Cells/Alignment, and uncheck the
merged cells checkbox.
