Single quote marks around contact's name in reply?

I am new to Outlook from Outlook Express. Can anyone tell me why Outlook
puts single quotation marks or apostrophes around recipient’s names in emails
that I have replied to? For example if Mike Smith sent me an email and I
reply, why does his name appear as ‘Mike Smith’ in reply and in sent items?
How do I turn this off?

Hi Joseph,
When you create and send a new message, (or forward one,) the recipient’s name
is displayed in the TO field of your sent items folder as it is filed in
your contacts list.
When you reply to a message the TO field displays the senders
Display name as he has set it. If Mike Smith would have chosen to appear as
Mickey, this would be the name you would see in the TO field.
The quotation marks indicate that you sent the message to someone who calls
himself ‘Mickey’ and not someone from your contacts list.
