When I misspell the word 'Shanghai', Word suggests Shanghais. I have used auto correct as a work around but does anybody know why Word does not recognize Shanghai as a correct spelling?
If you mean why doesn't Word offer "Shanghai" in the list of suggestions, I don't know.
But, I do know that is what your custom dictionary is for.
Go to Tools/Options/Spelling and Grammar, click Custom Dictionaries and edit your dictionary. Once you add "Shanghai" it will begin appearing in the list of suggestions
