spellcheck problems

I am using Word 2007 on Windows XP Home in the UK.
I have set every option I can find to make English UK my default language
and Dictionary.

Often while doing Spell check I find that Word has decided to use English US
which means I have no option to save to Dict. and accept US spellings
without manually changing Language.
Why? and how to stop it?

John, I don't think you can re-train it. I have the same problem and it
frequently throws up 'z' when I want 's', etc., etc.

I have passed it to Ms but without satisfactory response.
