spellchecker keeps changing from english UK to english US

The spellchecker keeps changing from English UK, which it is set up for, to
English US, which stops me adding words to the custom dictionary. How can I
stop this?

that (a) Custom.dic is usually set for "All languages," and (b) if you paste
in text that is formatted with another language (which is a character
property), it can change the language at the insertion point regardless of
your default settings.
