spellling dictionary

I have recently created a section with multiple pages and sub-pages (writing
a book - about 150,000 words) but I have now found the following. The default
spell checker is USA spelling but I have now found that I have little chance
of getting in published here in USA but an excellent chance in UK. I am
trying to spell check in UK spelling but find it continually returns to USA
spelling which it was originally written in. I have changed default spell
check for Office 07 through control panel to UK spelling restarted etc but
apparently that is for only future stuff. Is there any way I can change spell
check from USA to UK for the whole section? Thanks

From the Help:

Before you begin If you want to change the default language and
dictionary to a specific language for all 2007 Office release programs, see
Change the default language for Office programs.

The spelling checker uses the language dictionary that matches the language
associated with each note on your page. Therefore, if you have notes in
different languages you must set the language for each note to the
appropriate language. For example, if you have a page with notes in English
and Spanish and want to check the spelling of all notes on the page by
using the appropriate dictionaries, you must set the English notes as
English and the Spanish notes as Spanish.

To check the language associated with a note, do the following:

Select a note you want to check.
On the Tools menu, click Set Language.
In the Set Language task pane, verify that the correct language is
associated with the note. If it is not, select the language you want to use
for the dictionary and other proofing tools.
Note A Language Pack might be required if your version of the 2007
Office release does not include the dictionary for the language you want to
use. For more information, see Determine if you need a Language Pack.

Click back in the note.
Do steps 1-4 for each note you want to check.
To check the spelling, do the following:

On the Tools menu, click Spelling, and then click Spelling again. Or press
F7.
The spelling checker uses the specified dictionary language, if available,
to check the spelling of each note.

In addition to Erik's recommendation:

One can individually set the language for each *marked* part of Text
(f.e. with Ctrl+A or by selecting a container). The standard way is
Extras > Select language (as Erik has explained).
This is not practical at all as it opens the work pane and shows an
endless list of languages.

As I always change between German and English I had to find a different
way and I was successful.
The far easier way is to place a language selection icon with a
"drop-down list" in the toolbar.

Way to go:
a) In one of the toolbars with a down-arrow select "Add or remove
buttons", then "Customize";

b) in the dialog select the tabbed page "Commands";

c) in the left columns (Categories) scroll down to the end and select
"All commands"

d) on the right side scroll down to "Language" with the field (drop-down
listbox);

e) pick this command and drag it up to one of the toolbars.

Thereafter one can easily select the language needed.

Caveat: the above mentioned terms are *my* translation, they way
slightly differ from the official English terminology.
