how do I specify a spot color in Word? Do I change the CMYK to match the pantone color? If so, can I then select a tint of that spot color?

Basically, "Yes".

Note that internally, ALL colour is RGB in Word 2004. It does not offer
Pantone colour matching, and I would not trust its CMYK interpretations.

John is "spot on" here [pun intended :)]

Further to his comments: If you aren't intending for the document to be
commercially printed it really isn't worth the worry. The vast majority of
local printers - regardless of what the mfrs would lead you to believe - are
not CMYK devices, themselves. Even those ink jets with Cyan, Magenta, Yellow
& Black ink cartridges [plus whatever other colors are thrown in] convert
colors using RGB algorithms. In fact, you'll typically get better color
fidelity if you send them RGB rather than CMYK in the first place :)

If you do intend to print a Word doc commercially & must use specifically
formulated colors for trademark requirements it's best to consult with the
printing company on how to handle spot color at press time.
