I'm testing and playing to see what I can and can't do with onenotes so I
have lots of silly little questions.
? With the auto table structure I wonder if there is a way to freeze panes
like you can in Excel.

No.

OneNote tables are extremely simple (but functional enough for notetaking)
in their implementation.
